Analysis of Pseudomonas and heat-resistant peptidases in raw milk

Heat-resistant bacterial peptidases in raw milk are often associated with premature spoilage of milk and pose a problem regarding the quality of long-life milk products. Studies have determined Pseudomonas as the most common genus in raw milk possessing the highest proteolytic activity.
Our current research deals with the regulation of peptidase production and the development of a detection method for milk-relevant Pseudomonas species. Another project focuses on the identification of entry routes for Pseudomonas into raw milk including the analysis of farm-specific factors.
